In Hong Kong, we rarely scratch below the surface of bourbon, but many names we see, normally tucked to the side of more prominent Scottish varieties like Macallan or Johnnie Walker, chronicles almost all the important characters and events of American bourbon and whiskey history; Elijah Craig, Rebel Yell, Evan Williams, Jim Bean, Knob's Creek, Jefferson's bourbon, Jack Daniel's, Wigly, Small Batch 1792. What's special here is how much these stories are unvarnished, but treasured, and retold proudly. Over the past few years we've come to treasure even more, our own history, language, culture in Hong Kong. Next time we enjoy a glass of American whiskey, no matter if it's a bourbon, rye whiskey, sour mash, or straight whiskey, its historical depth of struggle and resilience, should taste rather familiar to our hearts, and garnish a greater appreciation.
Here are some definitions of popular style:
Bourbon: Has to contain 51% corn of overall grain bill, aged in new charred oak barrels for at least 2 years, distilled to no more than 80% ABV, filled into the barrel at no more than 62.5% ABV.
Rye Whiskey: has to contain 51% rye of overall grain bill, aged in new charred oak barrels for at least 2 years, distilled to no more than 80% ABV, filled into the barrel at no more than 62.5% ABV. Bottled at no less than 40% ABV.
Straight Whiskey (straight bourbon, straight malt whiskey, straight wheat whiskey, straight rye whiskey): aged in new charred oak barrels for at least 2 years, distilled to no more than 80% ABV, filled into the barrel at no more than 62.5% ABV. Bottled at no less than 40% ABV. Straight whiskey cannot have additives or tempering after ageing (aside from blending between different casks of straight whiskey). The category of straight whiskey was enforced to counterfeit whiskey.
Toasted Barrel: Where a char is a 40 to 60 second burn of the interior of a barrel, a toast is barrels that are subjected to less extreme temperatures for longer durations than a barrel char. The result is a more complex flavours, less vanilla.
Sour Mash Whiskey: when a previous batch of mash (25% or more) is introduced in a new batch of mash to control its pH for enzyme, bacteria, and yeast development. It's more of a step in the process of whiskey making.
