Four Pillars Wild Isle Gin 700ml

This gin was made in collaboration with Island Gin, a small craft distillery based on Great Barrier Island off the coast of Auckland, New Zealand. Inspired by the natural beauty surrounding the island, Four Pillars’ Head Distiller Sarah Prowse (known as “Prowsey” to the team) wanted it to be super coastal and savoury—a true reflection of the environment it was created in.

She experimented with botanicals like bull kelp (foraged off the Great Ocean Road), Old Man saltbush and kunzea, two kinds of Aussie coastal bushes. She threw those all in the pot of a still, along with rosemary, Tasmanian pepperberry, bay leaves, and some quandongs for sweetness along with some Manuka honey, brought home from Great Barrier Island. The resulting gin is layered and textured, with a brininess that makes it perfect for a Martini. The subtle line of Manuka honey gives the gin a nice floral characteristic to finish
