Sauvignon Puntay Alto Adige DOC is a white wine produced by the Erste+Neue winery, which already in the name heralds its innovative character. This label from the Puntay range, characterized by high quality wines, is obtained from the exclusive vinification of Sauvignon Blanc grapes. The typical vegetal notes of this vine are enhanced thanks to the richness and complexity of the calcareous soils on which the Guyot-trained vines rest. At the end of a harvest that involves the careful selection of the bunches, the grapes are subjected to a quick maceration that doesn't last more than 24 hours. Subsequently they are left to ferment spontaneously inside large wooden barrels. In the same containers the wine remains for seven months to refine before bottling. Sauvignon Puntay Alto Adige DOC is a ready-to-drink wine, which can still give pleasant surprises after further evolution in the cellar for a couple of years.
