Winemaking: Grapes are harvested from six different parcels divided on the hillside inside the Côté de Lechet 1er Cru area. The fermentation and aging are carried in oak barrels and stainless steel tanks. A final blending between the two is made afterwards, achieving a complex and balanced wine. Bottling is done 10 months after harvest.
Tasting notes: The wine as an attractive and honest red apple and fresh pear scented bouquet. On the palate, it is well balanced with a slightly waxy texture, lightly spiced, and with a defined and persistent finish. A subtle and elegant Chablis suitable for aging.
Pairing: An excellent pairing for seafood dishes such as crab and lobster. Can also be enjoyed with cheeses like a mature cheddar, Comté or goat cheese.
