It's produced with using the local Yamadanishiki specially grown by the skilled local farmers. The aroma is gently fruity like strawberries. The texture is clean and refreshing, and the pure sweetness carefully extracted from Yamadanishiki spreads softly. Then, the Umami and sourness follows, and make the layers of taste.The finish is very sharp and beautiful, like a Japanese sword.
It goes great with sashimi, carpaccio, stewed red sardines, and teriyaki nigiri of conger eel. Chill to 5°C to 10°C and enjoy.
