Xi Jiu is a soy aroma type of baijiu and uses the same production techniques as Moutai.It has a strong millet character of strawberries, dark chocolate, coca caramel and walnut. Typically acidulous and lactic, the soy sauce in the background adds complexity to this balance liquor.Xi Jiu pairs well with foods of strong flavours.
