Billaud Simon Chablis Grand Cru Vaudesir 2019, Burgundy, France

The Vaudésir parcel is located in Chablis between les Grenouilles, Valmur and les Preuses, and its soil is kimmeridgian, exposed to the south-east. Domaine Billaud Simon owns 0.5 hectares of this parcel, with 32-year-old vines.The grapes are picked by hand before being pressed pneumatically. The alcoholic fermentation takes 15 to 18 days, then the wine is matured for 14 months, sometimes in French oak casks.

The nose offers up intense aromas of ripe white fruits (apple, pear) and citrus fruits, white flowers, hazelnuts, mint and a touch of salinity. At once rich, powerful, well-rounded and fresh on the palate, with a lovely, mineral length. We recommend serving it with fish or goats' cheese.
