When the temperature dropped to a frigid -10°C, the Vidal grapes for this Icewine were carefully picked by hand from Niagara-on-the-Lake vineyards. The frozen grapes were then pressed to release the treasured drop of pure extract from each grape. A cool fermentation temperature of 15°C was maintained to preserve the pure fruit expression and freshness, which was followed by stainless steel aging. Clean fruit flavours of peach, pear juice, tangerine and just a hint of honey excite the palate. The lingering finish showcases additional flavours of lemon drops, apricot and candied citrus peel. Serve well chilled, 8 to 10°C is ideal, in small white wine glasses.
This wine is delicious with a cheese course, especially one that includes Saint André, a creamy blue cheese and a nicely aged Canadian cheddar. At the end of a meal, it's a wonderful choice to serve with fruit-based desserts of mango, pear, quince, sweet citrus or tropical fruits, or rich crème caramel, crème brûlée, custards and syllabubs.
