Merlot is one of those underrated grapes that seems to always play a supporting role to other varieties, using it's high alcohol and body, and medium acidity and tannin. This variety often feature red and dark fruits, including berries, plums. In hot climates Merlot tends to exhibit more fruity characters, including fruitcakes and chocolate, whereas in moderate climates, it exhibits a slightly more herbaceous flavour such as mint.
