Japanese wines are synonymous with Sake, and Plum Wine. Both of which are dangerously easy to drink. Some of the labels on bottles of sake describe what you should expect, here are some simple explanations.
大吟醸 - rice has at least 50% of its outer layer polished away.
吟醸 - rice has at least 60% of its outer layer polished away.
純米 - alcohol is produced with 100% rice, without additional alcohol added.
